Easy Kinda Chow Mein

Sometimes food just isn't photo worthy but is so simple, delicious and nutritious it's worth a share anyway. Enter curried mince and veg: 1kg mince, about 20C chopped miscellaneous veg add in some curry powder and coconut aminos and you got yourself a partay for 10 😬 I make this baby in bulk using up whatever veg I have in the fridge and eaten hot or cold it gets used as our filler meal as the week goes by. Baby won't settle so need a quick dinner? Enter curried mince and veg. Breastfeeding late and need a snack? Enter curried mince and veg. Husband eat all the lunch you'd packed for tomorrow? Enter curried mince and veg. Need some real food fast on the run? Enter curried mince and veg. World peace? Enter curried mince and veg. Except okay maybe not that last one but maybe it's worth a shot?

*Since this recipe uses no grains and only low carb vegetables it uses quite a lot of fat. Don’t be scared of this. If you’re using a good quality unprocessed fat like tallow or unrefined coconut oil it will help to keep you feeling fuller for longer while also being good for you.

You’ll need:

200g cooking fat (I use tallow)

1kg beef mince

1kg veggies finely chopped/shredded - a combo of onion, carrots, broccoli, some kind of Asian green like bok choy and cabbage is usually my go to.

6-8 tsp curry powder (or to taste)

4Tbsp coconut aminos or tamari if you can have soy (or to taste)

Method:

  1. Over medium high heat melt the fat. If you’ve got a very large wok use this, I don’t so I use my largest casserole dish.

  2. Add the mince, any firm veggies (like onion, carrots, broccoli stalks) and stir every now and then for about 10min or until well and truly browned.

  3. Stir through the softer veggies (cabbage, broccoli florets, bok choy), curry powder and coconut aminos/tamari pop a lid on and let it steam for a couple of minutes then stir again. Should be done now. If veggies aren’t ready stir them over the heat until cooked to your liking. 

  4. Serve or package up in serving portions and store in the fridge until needed.
