5 minute Tuna Patties
A really speedy an simple lunch perfect for toddlers.
Makes enough for 3 toddlers or 1 adult + 1 toddler.
You’ll need:
2 large eggs
3 Tbsp sweet potato flour (I think 2 Tbsp mashed sweet potato would work too)
135g (drained weight) of jarred or canned tuna
I used the olive oil the tuna was jarred in to fry the fritters
Mix all ingredients in a bowl and then fry spoonfuls until golden brown and flip to do other side. Serve with veggie sticks or some cooked veg.
