Mexi-ish Chicken

Dinner for my bubbacino (although ours is the same sans broccoli). Hubby keeps asking me what it ‘is’ and I just keep telling him to eat it. I guess it could be called Kinda-Mexi-Chicken with veg. Either way it gets a big thumbs up.

Kinda-Mexi-Chicken 

Serves 4 adults + 2 kids

Big glug of oil

500g chicken breast, cut into strips

1 onion, finely chopped 

1 red capsicum, finely sliced

1 green capsicum, finely sliced 

1 yellow capsicum, finely sliced

1 zucchini, sliced

Handful of mushrooms, sliced

1 Tbsp smoked paprika

1 Tbsp ground cumin

1 Tbsp ground coriander 

1 Tbsp dried oregano

1/2 tsp chilli flakes (optional with kids)

1 small bunch coriander, finely chopped

Heat the oil in large pan and sauté the chicken and all veg for about 15min. Keep the pan hot enough for browning but obvs not hot enough to burn.

Add the spices and stir through over heat for about 30 seconds or until aromatic.

Add 1/2 cup water and the coriander and stir through.

Et voila! Serve. .

Baby had his with 1/2 head steamed broccoli (boy sure does love his broccoli). Hubby and I had ours with some rice. Could also be used as a burrito or enchilada filling.
