Sweet Potato & Broccolini w Sesame, Maple & Orange Dressing
Super simple and tasty salad that is a real crowd pleaser. Works well for a take-a-plate lunch and also as a way to jazz up the humble meat and veg. You could also serve with some lentil burgers or fry up some tempeh to make a vegan/vego meal.
Ingredients:
4 small sweet potataoes, cubed and roasted
3 bunches broccolini, steamed
Dressing:
3 Tbsp olive oil
3 Tbsp good quality fresh OJ
1 Tbsp chopped chives
1 Tbsp maple syrup
1 Tbsp white sesame seeds
Method:
Arrange cooked veggies in a bowl or on a platter.
Combine all dressing ingredients in a bowl and whisk with a fork.
Pour dressing over veggies and serve.
