Caramel Bliss Bites

Makes 10

You’ll Need:

300g medjool dates, pitted

100g nut or seed butter

150g almond or other nut meal

2 Tbsp (about 30g) ghee, butter or coconut oil

To coat: 1/2 cup (about 75g) chopped nuts or buckinis (activated buckwheat)

Method:

  1. In a small bowl cover the dates in boiling water to let them soften, leave for 20min.

  2. Drain the dates, add to a food processor with nut butter, almond meal and oil of choice. Blend until smooth.

  3. Roll tablespoonfuls of the mixture into balls. If it's too sticky, chill in the fridge for 10 minutes before trying again.

  4. Pour the chopped nuts into a bowl. Toss each ball until evenly coated.

  5. Keep chilled in the fridge or freezer until you want to eat.

  6. Store airtight in the fridge or freezer for up to a week.

Make this nut free: by using sunflower seed butter or coconut butter instead of nut butter and sunflower seed meal or desiccated coconut instead of almond meal. Roll in activated buckwheat or 'buckinis' or desiccated coconut to serve.

To store, wrap airtight and then keep in the fridge for up to a week or 2 weeks in the freezer.
