Snickers Slice
Obsessed with this take on Snickers Slice. I was on my way to making a Gingernut slice and decided part way through I could make it Snickery instead. And boy am I glad I did, coz it is deeelicious. Ticks so many boxes too - #grainfree #glutenfree #dairyfree #eggfree and even #chocolatefree for other poor souls like me who can’t have it 😫 Could also be made #paleo with the substitution of another nut butter instead of the peanuts but I just don’t think it would be the same! Here’s the recipe if you want to make it 🤤
**of course if you can eat chocolate please melt and spread your favourite chocolate over the top of the filling. I’d then put the buckinis on top of that just because #crunch
Base
115g / 1C walnuts or pecans
80g / 2/3C almond meal
75g rice malt syrup (or less, 50g works well too)
50g coconut oil
Blend in a food processor until smoothish and sticky. Press into bottom of 20cm pan. Chill
Peanut Caramel Topping
300g / 1.5C medjool dates, soaked in boiling water for 20min, then drained
150g coconut oil
150g peanut butter
Pinch of salt, to taste
Blend in a food processor until smooth. Spread over base.
Crunch
1/4C Buckwheat groats/Buckinis
Sprinkle evenly over caramel topping and press gently to get them to stick in. Chill for an hour or so then eat.
